Palate

Fruit first

Apple, pear, a clean barley sweetness. These are the visits that usually sit in that mood. One of them is enough for the day.

Speyside

  • Glenfiddich is in Dufftown. You can walk the town when you are done.
  • The Glenlivet is up the glen, and the visitor centre is seasonal.

Fife and the south

  • Kingsbarns, east of St Andrews, describe their spirit as orchard fruit with a light floral edge. The gin cottage is next door, so book the whisky tour.
  • Lindores Abbey, at Newburgh, ferment long because they want the fruit. Apples turn up in their own account of the spirit.
  • The Borders Distillery in Hawick is the lighter visit if you are already in the south.

The cities

  • The Clydeside call their usual malt a lighter, fruit-led Lowland. Once a year they run a short peated batch. The core tour is this glass.
  • The Glasgow Distillery call their flagship fresh and fruity, from unpeated barley. They also make a peated malt and a triple-distilled one, so ask which tour you have booked. Hillington is not a stroll from the centre.
  • Holyrood, under the crags, walks you through more than one recipe, and the gin as well. Ask what the tour is pouring.
  • Port of Leith is the new-make visit. You bottle the spirit before a cask has chosen a mood. The bar upstairs pours a wider set.
  • Stirling Distillery makes whisky under the castle as well as gin. Book the whisky tour if this is the gentle day.

Further out

  • Nc'nean, at Drimnin, describe their flagship as unpeated, with citrus and stone fruit. Weekdays, and only if you have booked.
  • 8 Doors, at John o' Groats, say they use unpeated malt and aim at a light, fruity new make. On 10 October 2026 the tours were a summer season, finished at the end of September.

Johnnie Walker Princes Street is the afternoon if you want several styles under one roof. It is an experience. The whisky is made elsewhere.

This is a direction, not a promise about the cask they pour on the day. One visit. The others can have a morning of their own.
