Edinburgh is where a lot of trips start, and it can hold a whole day without a Highland road. Holyrood, under Salisbury Crags, makes a single malt and a gin. Port of Leith is the tall new still on Whisky Quay. Johnnie Walker Princes Street is the West End experience, and the whisky itself is made somewhere else. Pick one of them, then a bar once you are done walking.

The Old Town bars are small, and several of them have stairs. They make a fine evening once the crags and the tour are done.

Leith has the distillery on Whisky Quay, and Moonwake on the shore if the day wants hops instead. The Water of Leith will get you most of the way, and the beer garden does the rest.
